Pan de Cruz is known for its compact and dense texture of durum wheat, with a consistent, white crumb. Its distinctive domed loaf and smooth crust are distinguished by two deep cross-shaped cuts, which are popularly associated with the Cross of Calatrava, the symbol of the region. Made with a hard dough, this bread has a thick, soft and crunchy golden crust, with a toasted cereal flavour. The crumb is white, soft and spongy, with an intense cereal aroma and a slightly sweet touch.
Although this bread was traditionally baked in wood-fired ovens, Panadería Orejón has managed to preserve the tradition thanks to the advanced technology of the GPG STATIC REFRAC oven., which replicates traditional cooking with consistent, high-quality results.
